As tendências dos mercados apontam cada vez mais para o aumento da qualidade e da garantia de segurança nutricional e alimentar como exigência comercial para produtos agropecuários. Têm-se alcançado avanços importantes nesses últimos anos com as Indicações Geográficas (IG), que atestam determinados padrões de qualidade pré-estabelecidos e, assim, podem se constituir em uma adequada opção de atividade rural pautada nos critérios de sustentabilidade. O objetivo deste trabalho é descrever o processo de registro da Indicação de Procedência ?ESPÍRITO SANTO? para o Café Conilon produzido no Estado do Espírito Santo. O café conilon, com sua adoção em pequenas, médias e grandes lavouras de propriedades dispersas por todo o Estado, transformou-se em uma das mais expressivas atividades econômicas e sociais. A cafeicultura do conilon ocupa lugar especial na
história, cultura, e economia nos municípios capixabas. A produção, associada à produtividade, coloca o Espírito Santo em posição de destaque na produção nacional e internacional dessa espécie. A área geográfica para a produção de café conilon da IP corresponde aos limites geopolíticos do Estado do Espírito Santo. O usuário da IP deverá obedecer às Boas Práticas Agrícolas. O café deverá ser submetido à avaliação organolépticas. A certificação para o produto café conilon como IP, além de promover o desenvolvimento regional, poderá, com o passar do tempo, proporcionar também mudanças culturais na região capazes de favorecer a ampliação das interações entre os cafeicultores envolvidos e entre estes com os demais elos da cadeia, tornando o ambiente produtivo cada vez mais profícuo.
Market trends lead to higher standards for better quality in agricultural products that ensure nutritional and food security. Important advances have been achieved with Geographical Indications (GI), which indicate predetermined quality standards, and thus may constitute an appropriate option for rural activities based on sustainability criteria. SANTO? for Conilon Coffee produced in Espírito Santo. Conilon coffee, grown in small, medium, and large farms spread throughout the territory of Espírito Santo, has become one of the most expressive local economic and social activities. Conilon coffee farming represents a significant factor in the history, culture, and economy of many cities in Espírito Santo. The production, associated with productivity, places the state of Espírito Santo in a national and international prominent position. The geographical area for the production of conilon coffee with this Indication of Source corresponds to the geopolitical limits of the state of Espírito Santo. Those who will use the Indication of Source must comply with Good Agricultural Practices. They must submit the coffee to organoleptic evaluation. The certification for the conilon coffee product as an Indication of Source may promote regional development and provide local cultural changes capable of favoring the expansion of interactions between the coffee growers
involved and the other links in the chain, making the productive environment increasingly fruitful. Coffee is one of the most widely consumed beverages in the world. The genetic variability of Coffea canephora has demonstrated significant differences in the chemical compositions of genotypes, resulting in different sensory profiles in the beverage. Fermentation can also affect the sensory quality of coffee beverage. Therefore, the objective of this study was to analyze the sensory profile and the chemical groups that contribute to the sensory qualities of the coffee beverage of C. canephora var. Conilon genotypes subjected to different fermentation processes. Fermentations were carried out with 4 L of cherry coffee or peeled cherry coffee for 36 h at 25 ?. In the induced fermentation, the initial Colony Forming Unit (CFU/mL) was of 107 for Saccharomyces cerevisiae, Klebsiella sp, and Lactobacillus brevis. There was no microbial inoculation in the washed fermentation and the natural process. The sensory quality and chemical groups of the coffee were determined using the Uganda Coffee Development Authority Sensory Analysis Protocol with 6 Q-Graders and mid-infrared spectroscopy, respectively. The sensory and spectrometry analyses were able to distinguish the genotypes, highlighting the separations of genotypes A1 and Verdim with the worst sensory results, and genotype 153 with the best result. Groups formation through the mean Euclidean distance reinforces the sensory differences between fermentations. Furthermore, the greatest chemical changes in coffee beans were promoted by fermentation induced by S. cerevisiae. Thus, the genotypes and the type of fermentation influence in the sensory quality demonstrating potential for optimizing fermentations to improve the sensory quality of conilon coffee.
